Terra Mae Celebrates One Year of Culinary Excellence in Portland

February 5, 2026 by Misty Milioto Leave a Comment

Nestled within CASCADA Thermal Springs + Hotel, Terra Mae recently marked its first anniversary in December 2025. Under the visionary leadership of Chef Megan Sky, this Portland dining destination has become a must-visit for anyone seeking an unforgettable culinary experience.

A Unique Fusion of Cultures

Terra Mae stands out as a true category shifter in Portland’s vibrant food scene. The restaurant masterfully blends the rustic charm of the Portuguese countryside with the sleek sophistication of modern Japan, creating a dining experience unlike any other in the Pacific Northwest. However, this isn’t fusion for fusion’s sake, which I love. Instead, it’s a thoughtful marriage of two distinct culinary traditions, each enhancing the other while celebrating the bounty of local, seasonal ingredients.

The Vision Behind Terra Mae

Sky brings more than 15 years of culinary excellence to Terra Mae, along with an inspiring personal journey. From her beginnings in the foster care system to leading multi-million-dollar restaurant operations, her story is one of perseverance, passion and unwavering dedication to her craft. Armed with a degree in hospitality business management from Washington State University and experience transforming more than 20 eateries through her consulting firm, the Palomar Group, she has brought all of her expertise that shines through in every aspect of Terra Mae.

Working alongside Executive Chef de Cuisine Jules Boyd, Sky has built a female-led team rooted in equity, mentorship and collaboration. Their combined decades of experience and cultural knowledge are apparent in every dish, transforming Pacific Northwest ingredients into inventive, globally inspired creations that linger in memory long after the meal ends. Truly, after an intimate dinner here in December, I’m still reminiscing about the bluefin otoro sashimi, those incredible dumplings and that unforgettable Alcatra.

A Commitment to Sustainability

Sustainability isn’t just a buzzword at Terra Mae. Instead, it’s woven into the very fabric of the restaurant. From partnerships with local farmers and fishers to nose-to-tail cooking, in-house fermentations and zero-waste initiatives, every decision reflects a deep respect for ingredients and the environment. The restaurant emphasizes health-conscious dining by sourcing locally grown organic ingredients and creating house-made alternatives to processed foods.

Even the interior design reflects this commitment to sustainability. Chef Sky personally designed the space, centering it around an open kitchen that creates a voyeuristically engaged dining experience. Natural, organic materials dominate—with no synthetic materials in sight. The cozy bench seating along the windows features natural cork leather sourced from Portugal, complemented by plush, colorful throw pillows. Plaster countertops wrap the kitchen and bar area in handcrafted, artisanal continuity, while the walls are finished in limestone plaster rather than wallpaper or vinyl.

Meanwhile, an exposed mass plywood structure supports six skylights that flood the space with natural light—thereby nurturing a curated collection of plant species, reinforcing the restaurant’s biophilic quality. The color palette draws from Portugal’s landscapes, with earthy tones and textures reflecting organic materials. Seating is inspired by Lisbon’s terraced Portuguese rooftops, while subtle blues evoke the coastline of the Algarve and greens recall the lush greenery of São Miguel, Chef Sky’s homeland.

Vines weave around seating areas and connect to a stunning 17-foot-long art piece, Minha Mãe, Sua Mãe (My Mother, Your Mother), painted by local artist Blaine Fontana. The artwork conveys the divine feminine and its power, rippling through the natural elements—air, earth and sea—that surround Terra Mae, evoking a sense of reverence and connection between human craft and the broader natural world.

Even the smallest details reflect this sustainable ethos. Cushions are crafted without petroleum-based foam, while alabaster stone candle holders on each table emit a soft, warm glow, symbolizing the power of the earth. The plateware, sourced from Portugal, features soft, natural colors—blues, taupe and terra cotta—eschewing white for a more nuanced, earth-inspired palette.

An Unforgettable Dining Experience

My recent visit to Terra Mae exceeded every expectation. The bluefin otoro sashimi was transcendent, literally melting in my mouth with buttery perfection. The dumplings—filled with Linguiça, leeks and cabbage, then bathed in a Japanese curry sauce—represented the restaurant’s fusion concept at its finest, honoring both Portuguese and Japanese culinary traditions in a single, harmonious bite.

Meanwhile, the fisherman’s stew showcased Oregon black cod, tiger prawns and clams swimming in a red palm coconut seafood broth that Sky pours tableside, creating both theater and flavor. The flatiron steak was cooked to perfection, but the real showstopper was the Alcatra—wagyu beef cheek so tender it required no knife, served dramatically in a clay pot that retained every bit of heat and flavor.

Even the cocktail program deserves special mention. The freezer Manhattan achieved that elusive perfect balance, neither too sweet nor too spirit-forward, just impeccably cold and smooth. Every drink we tried demonstrated the same attention to detail and balance that defines the food menu.

What’s Next

As Terra Mae celebrates its second year of tempting tastebuds, Chef Sky isn’t slowing down. She’s preparing to open Forbidden Fruit, an intimate dining and bar experience set in a lush garden environment. The menu will draw inspiration from the wild and the sacred, featuring bold flavors, rare botanicals and spirited elixirs designed to awaken every sense.

Join the Celebration

Open Tuesday through Saturday, Terra Mae offers an elevated experience that merges refined aesthetics with warm, welcoming ambiance. It’s more than just a meal—it’s a sensory journey that celebrates culture, nature and the joy of coming together over unforgettable food. Trust me, you’ll be planning your return visit before you’ve even left.
